Just how far would you go to protect your top secret restaurant recipes?

This question was unwittingly answered by the An family who own five restaurants in Beverly Hills, Las Vegas, and San Francisco. They value their top secret restaurant recipes so much only members of the family are taught to make them or allowed to watch the cooking process.

One of their top secret restaurant recipes, in particular, is the most valued of all. The Garlic Noodles with Roasted Prawns is made with such secrecy and caution you would think it’s the elixir of eternal youth rather than restaurant fare. The garlic noodles are created inside a special kitchen within a main kitchen. But if you think "a special kitchen within a main kitchen" is secretive enough, think again. The Ans want to ensure no one pokes a curious eye or finger inside the main kitchen so they had it made in such a way that it resembles a vault — a vault that comes with two sliding windows.

But it doesn’t stop there. The Ans took secrecy to new extremes when they opened the Crustacean Las Vegas. No member of the An clan lives in Vegas, so what did generations of Ans do? They made their garlic noodles and the accompanying secret sauce every day in Los Angeles. Then, they had these shipped to Las Vegas in batches.

Oh yes, the Ans would do anything to protect their noodles, more so now that the cookbook America’s Most Wanted Recipes have taken restaurateurs’ secrets out of franchised chains and into the home.
